Asparagus Soup

This recipe may remind you of spring because of its fresh and elegant taste. However, this recipe is also perfect for a St. Patrick’s Day lunch or dinner. The rich green color, the creamy texture, and the sumptuous taste of this soup is worth all the effort put into making it. Here’s the recipe you can easily try.

Ingredients:

  • 1/4 cup butter cut into cubes
  • 1 cup of sliced shallots
  • 2 1/2 cups of chicken broth
  • 2 pounds of fresh asparagus sliced into 1 inch pieces
  • 1/2 cup of white wine or extra chicken broth
  • 2 teaspoons of coriander, ground
  • 1 cup of Parmesan cheese, shredded
  • 1/4 teaspoon pepper
  • 1/2 teaspoon lemon juice
  • 1/4 cup of sour cream or creme fraiche
  • 1/4 teaspoon of lemon zest, grated

Directions:

For the soup:

  1. Melt the butter in a large skillet or pan over medium heat.
  2. Add the shallots and cook until they are tender.
  3. Add the asparagus next and cook them for another minute.
  4. Pour in the broth, coriander, and wine. Bring the mixture into a boil.
  5. Reduce the heat and allow to simmer until the asparagus becomes tender. Don’t drain.
  6. Once done, allow the mixture to cool down for a bit. Pour everything in a blender and process the mixture into a purée.
  7. Add pepper to taste.

For the crisps:

  1. Great and heat a small skillet on medium heat.
  2. Add around 2 tablespoons of cheese and cook it until it becomes golden brown.
  3. Flip the cheese over to cook the other side.
  4. Once done, place on a waxed or parchment paper and allow to cool.

For the cream:

  1. Combine the lemon juice, lemon zest, and creme fraiche or sour cream in a small bowl.
  2. Mix well.

To serve the soup, ladle it into bowls. Add a dollop of the creme on top of that soup and serve them with the cheese crisps. Enjoy!

This next recipe is filling and flavorful. It’s big on taste, but won’t take too much of your time making it. You can serve it as is, with bread, or with a salad. You can adjust the amount of pesto sauce you’re going to use on the pasta depending on your taste. Follow these instructions and try out this recipe.

Ingredients:

  • 1 pack of bow tie pasta
  • 2 cloves of minced garlic
  • ½ cup of pesto sauce
  • ½ cup of oil-packed sun-dried tomatoes, drain and cut into strips
  • 1 teaspoon of olive oil
  • 2 boneless chicken breasts, chopped into bite-sized pieces
  • crushed red pepper flakes

Directions:

  1. Boil water in a large pot. Lightly salt the water.
  2. Add the bow tie pasta and cook for about 8 up to 10 minutes until the pasta is al dente.
  3. Once done, drain the pasta.
  4. In a large skillet, heat the oil over medium heat.
  5. Saute the garlic until it’s tender. Add the chicken.
  6. Season the chicken with crushed red pepper flakes to your taste.
  7. Cook the chicken until it’s cooked through and golden. Set aside.
  8. Combine the pasta, chicken, pesto sauce, and sun-dried tomatoes in a large bowl.

Make sure to coat the pasta and chicken with the sauce evenly. Serve as is or with your preferred side dishes or entrees.

Here’s an easy recipe that goes well as a side dish for almost anything. The steps to make this dish are very simple and you’ll be done in just a few minutes. Here’s the list of ingredients and the steps on how to make this.

Ingredients:

  • 1 pack of frozen broccoli, thawed and chopped
  • ¼ cup of cubed butter
  • 1 can of drained corn
  • ½ teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 1 teaspoon of basil, dried

Directions:

  1. Combine the butter, corn, and broccoli in a large pan or skillet.
  2. Cook the ingredients over medium heat or until the butter melts.
  3. Add in the basil, garlic powder, salt, and pepper.
  4. Cover the pan and let the vegetables cook for about 8 up to 10 minutes until they are tender.

Stir the veggies occasionally to evenly cook them. Serve as a side dish to your soup and pasta.

Directions:

  2. In small shot glasses or mini drinking glasses, assemble your Leprechaun dessert shots by starting with a layer of mint chocolate chip ice cream.

  4. Add a layer of crushed Oreos into the glasses.
