  2. Add the sage, thyme, and lemon zest to the garlic and crush the ingredients all together.
  3. Using a small mixing bowl, add the crushed garlic mixture and the softened butter together.
  4. Set this aside if you’re going to add it to the turkey immediately.

Directions for the turkey:

  1. Preheat your oven to 325°F.
  2. Make sure that your turkey is clean and dry.
  3. Loosen the skin from the breast meat using your fingers. Be sure to avoid tearing the skin.
  4. Spread the compound butter under the turkey skin.
  5. Bind the turkey legs using butchers twine and place the turkey on a rack and roasting pan.
  6. Rub olive oil on the turkey and season it with salt and pepper.
  7. Put the turkey in the oven and roast for about three hours.
  8. You can check the turkey if it’s already done by inserting a thermometer on the turkey thigh’s thickest part.
  9. The turkey will be ready when it reaches the temperature of 150°F.

For the pumpkin and tahini pie:

  • One 15-ounce can of pumpkin puree
  • ½ cup of tahini
  • 2 eggs
  • ¾ cups of sugar
  • 1 ½ teaspoon of ground cinnamon
  • 1 teaspoon of salt
  • ½ teaspoon of ginger, ground
  • ¼ teaspoon of clove, ground
  • ¼ teaspoon of nutmeg, ground
  • 2/3 cup of whole milk
  • whipped cream

For the chocolate pie crust:

  • ½ cup of butter
  • 1/3 cup of water
  • ¼ cup of cocoa powder
  • 1 ½ cup of flour
  • ¼ cup of sugar
  • 1 teaspoon of salt

Directions:

  1. Cut the butter into chunks about ½ inch in size. Place the butter into the freezer, as well as the 1/3 cup water to keep chilled.
  2. In a food processor, place the cocoa powder, salt, flour, and sugar. Pulse the ingredients to combine them.
  3. Add the chilled butter into the mixture and pulse until the butter breaks into pea-sized bits.
  4. While the food processor is running, add in the water to make the dough crumbly yet damp enough for you to press together using your fingers.
  5. Place the dough into a plastic wrap sheet. Wrap it tightly for an hour.
  6. When you are ready to bake, dust your workspace with flour and roll the dough into a circle with a 12-inch diameter.
  7. Allow an allowance of an inch to cover a 9-inch round pie pan.
  8. Tuck the edges under the dough and crimp the pie sides.
  9. Chill the dough in the fridge while you’re making the filling.
  10. Preheat your oven to 425°F.
  11. Using your food processor, puree the tahini, eggs, pumpkin puree, salt, cinnamon, sugar, ginger, nutmeg, and clove.
  12. As the food processor is running, stream in the 2/3 cup of whole milk.
  13. Once the milk is mixed well with the puree, pour in the smooth and creamy mixture into the pie crust.
  14. Bake the pie n the oven for at least 15 minutes.
  15. Adjust the heat to 350°F and bake for another 35 minutes.
  16. Once the pie is done, remove it from the oven and allow it to cool.

Serve this dish in slices. Top each slice with whipped cream and enjoy!
